Two of my best Easter recipes

Here are two of my best Easter recipes!

The first is a classic Oscar II, it contains almonds. I'm usually very sparing with almonds. The climate impact of almonds is quite low, albeit slightly higher than for other nuts, the big problem with almonds is water. An almond tree requires a lot of water, and almonds are usually grown in the USA and southern Europe where water is a scarce resource.
So no almond milk here, but a little almond for Easter and Christmas, I might also buy marzipan.

Oscar II - This is legendary Birgitta Rasmusson's recipe.
You can find it here with instructions on how to make it. The trick is to get the bases a little "dry" and crispy, not too chewy. I usually let them dry for a while and get completely cold, then I assemble the cake just before it's served.
The cake shouldn't be high, so don't worry when the bases don't rise in the oven, it's supposed to be like this.

Here's what you need to have at home:

Cake base

  • 100 g sweet almonds
  • 1.5 dl granulated sugar
  • 4 egg whites

Filling and garnish

  • 0.75 dl granulated sugar
  • 20 sweet almonds
  • 4 egg yolks
  • 2 dl whipping cream
  • 1 dl granulated sugar
  • 150 g butter
  • approx. 50 g almond flakes

My other recipe is a favorite with the kids. Plus, it's really quick to whip up.

You need
Chocolate pudding
Oreo cookies
Lemon balm, 1 pot

I've bought new clay pots and washed them with kitchen soap (which is unscented)
Then you choose your level. Make a luxurious chocolate mousse according to a fancy recipe or go for chocolate pudding powder in a bag if you prefer the quick way.
Fill the chocolate pudding in the pots, but not all the way to the top, save some space.
Then divide Oreo biscuits so that only the biscuit remains (remove the white filling) Put the biscuits in a mortar and pestle and crush them into powder/small pieces and cover the chocolate pudding with this cookie crumble. Then put a small sprig of lemon balm or other herb in the middle and it almost looks like a small plant in soil.
Fun Easter dessert for the kids. Let them scoop up the chocolate pudding from the pot themselves and there's usually a lot of giggling ;)
